My question is about incising icons.Why should you do this when preparing to write an icon?

In incising the surface of the gessoed board, the drawing will remain after applying the dark first layers of paint. If you don't incise, you may very well have to completely redraw features and interior lines. That is the practical reason. Theologically, incising reminds us that the image of God has been incised in each of us, no matter how many dark layers we pile on top.
